Pastry wheel
A pastry wheel, also called a pastry jigger, is a baking tool with a small rotating cutting wheel on a handle. Rolled dough is divided by running the wheel through it, often leaving a wavy or serrated edge. Older examples can also be decorative craft objects.
Materials and forms vary. Norway's KUBEN museum describes an elaborately carved example in bone material, AAM.14560, with a chess-piece-like feature on its handle. Its precise dating is uncertain; the museum's accession year of 1972 is not its manufacture date. The Loison Museum collection demonstrates a range of materials and sizes.
Norwegian baking terminology also includes patterned rollers under the broader term baketrinse. Identify the working part: a cutting wheel divides dough, while a roller impresses its surface. Check the axle, wear and handle before assigning age or material.
