Rosette iron

A rosette iron is a kitchen tool for making rosettes, thin pastries fried in fat. The typical form consists of an open, rosette-shaped metal head on a long stem with a handle. The head is dipped into batter and then hot fat, allowing the pastry to form around the metal.

This distinguishes it from a waffle or krumkake iron, which cooks batter between plates. A rosette iron acts as a mould within the pastry. Its construction is therefore more useful for identification than the mere presence of a long handle. Rosettes belong to Norwegian festive baking traditions, but a rosette pattern alone cannot date the tool.

Collectors should describe the head, stem and handle separately. Check for secure joints, missing parts, marks and repairs. Preserve information about where the object came from. Rust, a dark surface or a worn wooden grip does not alone establish great age or Norwegian manufacture. Name a maker only when a mark or other documentation supports the attribution.
