Sausage-stuffing horn (pølsehorn)
A sausage-stuffing horn is a funnel-shaped implement used to fill sausage casings. The casing is drawn over the narrow end and the filling passes through the opening. Older examples may consist of a sawn section of animal horn with a natural funnel shape.
Materials and variants
Dansk Historisk Fællesråd's survey of museum collections illustrates horn, bone, glass and metal examples. Several different sizes could be stored together. A loose stuffing horn is distinct from a complete mechanical sausage stuffer. A mincer attachment should also be distinguished from a separate hand-used funnel.
Recording an older tool
Measure length and both openings. Describe material, worked edges, suspension and possible machine fittings. Do not date a simple horn section from wear or a dark surface alone. Previous ownership and use histories are valuable when identifying an unmarked implement. Historical Danish museum examples do not automatically establish Norwegian origin for a similar object.
